I measure a 2 tablespoon portion of dry steel cut oats, then prepare it, 2-3 times a month, knowing my 2 hour number will be out of range for me. Some things you just have to do once in a while.

I use fresh or frozen berries of all kinds and sometimes will add some hemp seeds for added protein.

@A DiabetesTeam Member I just follow the package

I measure the 1/4 cup - put the water (at whatever the direction states) and bring it to a boil - add the oatmeal and boil for the (maybe minimally 10 minutes - would have to check the package) - basically until it's the consistency that "I prefer" - I like it "sticky"

If you have never used Swerve before it is supposedly a 1 for 1 replacement for sugar

I do find a touch "less sweet" then the real thing but you can use as much as you want so if you want that "sugar rush" (without the actual rush), pile the stuff on 😁

The Lakanto brand uses slightly different ingredients

The Swerve is 100% Erythritol (zero GI/zero carbs) and the Lakanto is 50/50 Erythritol and Monk Fruit (still zero GI/carbs but not quite as sweet if you want a little more subtle)

The Lakanto caramelizes really nicely if you want to make something with a brown sugar "glaze" or if you try making Keto Butter Tarts - mmmmmm - the Swerve still works and gives the flavour, but the Lakanto will give you that slightly crunchy texture that will fool anyone
