I Am Looking For Some Healthy Light Breakfast And Lunch Ideas? For A Type 2 Diabetic.

I am an overnight worker from 12 am to 8 am and I currently plan out my work meals (portioned out ) My issue is when I get home I am looking for more options to eat. Currently two poached eggs with two whole wheat slices of bread, two boiled eggs with two slices of whole wheat bread (no butter)

Celery and peanut butter is my go to lunch
I also eat cottage cheese with blueberries.
