I started eating 4 meals a day, as equal in carbs/calories as I can (without going overboard) at 4'ish hour intervals
That gives me a little more "stable" energy levels and then I Pace Myself according to my energy levels
There is no way to really get your energy back at high levels - that option went down the drain when we developed diabetes

Sounds like you're doing great
Congrats!
I also have significant fatigue. I do what I call "paced" activities. I work at my project for a while, then I sit down and either just rest or do a sitting activity. I also participate in a water exercise class. I get a nice workout but the water supports me so I don't getover tired
