Yes I’ve done many of them. I actually prefer cauliflower rice in dishes calling for rice as it doesn’t expand and get mushy. I make cauliflower mashed potatoes and it is pretty good. I’ve found steaming it in my instant pot works best. I’ve tried various substitutes in lasagne and eggplant is my favorite. I use zoodles or palmini noodles for pasta and love roasted root Vegies. I’ve used lettuce for wraps and buns, tacos. The only thing I haven’t used is portobello for bun top but it sounds good. All great ideas. Oh and for me I prefer plain water.

Substitutions are useful but care needs to be taken to work out the carb content. eg net carbs for Aubergines (egg plants) is 5.2g which is a little on the high side for me and root veggies are too high for me.

So I use cauliflower rice and 0 carbs pasta as my main substitutes.

I have been making casseroles with spaghetti squash . Not pasta but pretty good
