As diabetics, if we are using (diet) to maximum advantage to help with blood sugar control we might tend to get in a rut and eat the same "stuff" day after day

If you are looking for "what to eat" forget Google - you get these "diabetes friendly" recipes that have exotic ingredients and you need to be a Michelin Chef to prepare the stuff

I saute some vegetables along with dinner, that I package to use for later meals.

So I buy a can of corned beef, put some in the frying pan along with the sautéed vegetables, on low to medium because I use butter as I saute the meat and vegetables.

I drop in 2 eggs. As the eggs begin to cook, I shut off the heat and cover with a lid.

In 2-3 minutes it is ready to eat. Amazing 1 pan meal.

I also have been putting fried eggs on top of practically everything and really like it. A few days ago, I made a big pot of Japanese hot pot with cod and chicken (shrimp is good too) to pour over 1/2 c whole wheat spaghetti noodles, in a big bowl. I had that for breakfast two days in a row because I eat my "big" meals for breakfast. For breakfast today I had left-over "Easy Chicken Mozzarella" (chicken breast, tomato sauce, onions, green peppers, and browned cheese on top) on top of left-over pasta. A fried egg would have been tasty on top of either of these dishes, I believe. My time-saver is to cook large batches and then I don't have to cook every day. Also, I am in the process of getting a smart-phone-so hopefully will be able to post some pics for the first time soon.

None of that for me...2 boil eggs and most of the time I don't eat the whites, with a little bit of Celtic Salt and and berries fruits 🍓 or apple 🍏 just a few pieces and I am full. My stomach can't handle more. No process foods at all, unless necessary.
