I'm Overwhelmed And Would Love Some Tasty And Easy Meal Suggestions. Any Favorites?

A DiabetesTeam Member asked a question πŸ’

I'm struggling with depression and anxiety on top of the stress of caregiving for my dad. I havent been treating my diabetes for the last 2 years and recently I have started getting repeating skin infections. This last trip to the urgent care they took my bloodsugar after I told them, and it was 356 😭. I need help but everything is so overwhelming right now. I just don't have the energy to deal with this all right now but I know I need to. Hoping some easy meals will help. Ty in advance.

Ella, you need to contact a Social Worker. You need a Home Health Aide for your Dad so you can concentrate on yourself. I don't know how to do this but it can be done. My Mom did this for her and my Dad when she realized taking care of him was too much for her. Talk to your Doctor.🌻

I grab a handful of raw almonds in the morning with a small glass of V-8. For lunch, I will have a garden salad, with one pita and a bit of hummus. Another thing I do for lunch, a bit of Swiss cheese, mini bell peppers, and a few almonds. It’s all fairly low carb, though the pita does raise it a bit. A garden omelette is a good option. Will your doc give you a referral to a dietitian? I do a mixture of Mediterranean or East Indian dishes for dinner. Lean poultry or fish with veggies. I am fond of one dish meals. I also love Tzatziki: it’s a garlic, cucumber, Greek yogurt dip spiced with mint and dill. I eat it with a pita and a salad or a few raw veggies. Hope this helps. I was a caregiver for my dad for many years. I know what that’s like. It was important for me to prioritize my own health, since there was a temptation to let it go under the demands of caregiving. Can you get respite care arranged from time to time? Just a thought. Hang in there.

It sounds like you're going through a lot right now. Here are some easy and tasty meal suggestions that might help you manage your diabetes without adding too much stress:

Breakfast Ideas:
- Meal in a Mug: Combine one cup of oatmeal, cottage cheese or yogurt, topped with fruit, nuts, seeds, a dash of low-fat milk, and a sprinkle of low-carb sweeteners.
- Microwaved Egg Whites and Cheese: For a quick protein boost, microwave egg whites with cheese in a mug.

Lunch Ideas:
- Chickpea Salad with Avocado and Red Onion: A light and refreshing option.
- Tabbouleh: Made from bulgur wheat, chopped tomatoes, cucumber, scallions, parsley, mint, garlic, olive oil, and lemon juice.
- Quinoa and Tofu: A nutritious and filling choice.

Dinner Ideas:
- Spanish Chicken Breast: Cook chicken breast in a skillet with a little butter, onion, and red bell pepper. Add fresh spinach, sour cream, and your favorite seasoning.
- Grilled Cedar Plank Salmon: Marinate salmon in soy sauce for 30 minutes, then grill on a cedar plank.
- Zoodles (Zucchini Noodles): A low-carb alternative to pasta. Try them with butter, garlic, and parmesan.

Snack Ideas:
- Chaffles: A low-carb "waffle" made from eggs, cheese, and seasonings.
- Light Salads and Veggies: Easy to prepare and healthy.

Tips:
- Crockpot Recipes: Consider making a stew that simmers all day with little prep work.
- Batch Cooking: Make large batches of food in advance and freeze portions to save time and energy.

Remember, it's important to work with your doctor or dietician to create a meal plan that matches your calorie, fat, and carb limits. You're not dieting; you're changing your life-long eating habits to accommodate your health needs. Take it one step at a time, and don't hesitate to reach out for support.
