I think the key is to eat the healthful food you like. Don't sacrifice taste. You like leeks and onions so go with those. Onions are considered sort of a super food with many benefits. Google vegetables for diabetes and they'll give you a list and tell you the benefits. Choose the ones you think you might like and how best to prepare them. I don't like zucchini but they taste good in an omelette. That's what I do for me. Take care of yourself. The key for me is taste.
I like eating apples n peanut butter, I also like popcorn but have to have salt on it. I'm not much of a veggies eater. If I eat them like raw I have to have ranch dressing or dip for them.
Salads and Veggies are not high on my list either and I "know" I don't eat enough veggies

I have been Diabetic for a little over 8 years
I have never had to take an anti-diabetic med "yet" so far
I am now 80 lbs lighter than when I was diagnosed (recently lost another 10 pounds without trying - e coli infection - not recommended) but lost 70 lbs in the first year and kept it off
So weight and blood sugar are managed eating a Low Carb/High Fat (LCHF) diet that is 60% FAT and 25% Protein which doesn't come from "green veggies" 😁
There is a Diabetes Friendly Diet to fit just about every taste - you just have to find the one that You can Follow and not cheat on - then it will work for you
