Figuring out what to eat can be daunting with diabetes, especially if some common foods may trigger a blood sugar spike.
Recently Lynette has been interested in trying new foods, as well as trying new ways of using ingredients that are healthy but not necessarily her favorite thing to eat. There is a type of pasta called ‘fregola’ that fits into the first category, and mint fits into the second. She found a recipe using both and decided to try it.
Fregola is a small round pasta that’s toasty and has a delightful nutty flavor. She loves the way mint smells, but the taste is not her most favorite. She did add in fresh peas, which she loves, as well as some ham. Below is the delicious end result.

I grew up on Kosher salt. It has no iodine in it. I still use it as I found out one needs iodine to prevent hypothyroidism. 65 years of no iodine I think I passed that boat.
