Most people who are allergic to peanuts (which is not a tree nut by the way) are not usually allergic to tree nuts (emphasize usually not you would need to be tested).

My Ex husband had a cardiac respiratory arrest (was resuscitated) to accidentally ingesting cookies that were baked in peanut oil. But he was able to eat tree nuts such as almonds, there are many recipes that can use Almond flour instead of other flours.

Almond flour is what I am now using to bake with and make my own breads now since a few months. Coconut flour can also be used, there are many online recipes you can find for almond flour and so on. I bought Keto breakfast and breads cookbooks as most use almond flour, I am mostly doing Keto diet, but not to lose weight, it is more for GI issues and diabetes sugar control.

I am allergic to ragweed and latex and was told this is why I cannot tolerate melons of any kinds, because melons often grow in fields with ragweed in them.

I am allergic to oranges and juices also. So I too understands multiple allergies to food.

I am also allergic to Iodine (I try and buy iodine free salt) but rarely use salt either, and allergic to shell fish and certain sea foods.

I am allergic to penicillin and I have to buy organic chicken (antibiotic free) and other meats (which cost an arm and a leg so I do not eat meat very often) because they use penicillin in chicken and other farm animals.

I can eat some fish so I keep canned salmon tuna and kippers and some frozen salmon & sole, occasional cod.

So if you can eat other nuts such as almond this could be a good start. I bake and cook Keto stuff I can freeze such as pancakes, breads, muffins and even donuts as a treat (they come from my Keto breakfast cookbook should you want to check it out let me know I can give you the title. This way I always have food on hand, take out of freezer and microwave.

You really need to consult with a diabetic dietician. Are phone consults available in your area? Your doctor could and should refer you because of your special needs in this area. Right now you should probably stick to protein and veggies.
