I use CarbaNada for casseroles especially when I’ve got my bottomless pit grandkids. They don’t mind it at all. I have the fettuccine noodles but haven’t used them yet.
Yes - normal stuff = portion control, there is lots of starch (carbs) in regular pasta
Whole Wheat kind has a "few" less carbs (because of the fiber) but still have to mind portion size
Or there is a few low carb options
Walmart (and lots online) sells Liviva brand pasta - the wheat is replaced by Soybeans so the carbs get cut in half compared to the real stuff - taste is acceptable to me
Advantage, you can eat "twice as much" as the real stuff
CarbaNada noodles made by Al Dente (small business in Michigan or Minnesota) - they also make normal stuff but the CarbaNada line is quite low carb and tastes good enough that "most" could not tell that it is not real pasta - a plateload (1oz pre-cooked) comes in at about 17 carbs (42 carbs for the same amount - 1oz pre-cooked - from a national store brand, in comparison)
Most spaghetti sauce is (naturally) low carb - a few grams for 1/4 cup of the stuff and any meat or meatballs in the stuff (unless bulked up with bread crumbs) is zero carb
It helps if you cook it the day before and refrigerate than reheat at mealtime. The temp change changes the molecules makes it harder to digest so it is less likely to spike your sugar. But portion control is key. I can never go back to a big plateful of spaghetti!
I try yo keep my carbs to 20 at a meal.
